Quick, Easy and Nutritious Recipe with Egg


Get your egg and asparagus out. This is a quick and simple recipe that can be dished up in next to no time. Enjoy!

Poached Egg with Asparagus and Parmesan

  • 4 Asparagus spears

  • 1 Free-range egg

  • Parmesan cheese, freshly grated using Cheftoolkits’s Zester Grater

  • Salt and black pepper

Trim asparagus spears, plunge into a pot of a lightly salted, boiling water and cook for about three minutes. Lift out asparagus with tongs and transfer to a plate. Return pot to a low heat and when the water is gently simmering, break in a very fresh free-range egg and cook for approximately three minutes or until softly poached. Serve asparagus topped with egg, grated parmesan, a drizzle of extra virgin olive oil and coarsely ground black pepper.

Serves 1 - Simply double or quadruple the recipe to cook for friends or family.
